Ingredients
- 1 lb shrimp, peeled and deveined
- 13.5 fl oz coconut milk
- 3 tbsp panang curry paste
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1 whole lime
- ¼ cup fresh mint leaves
- 2 cups cooked jasmine rice

In a large skillet or wok, heat 1 tbsp of the coconut milk over medium heat until it starts to sizzle, about 1 minute.

Add 3 tbsp panang curry paste and stir-fry until fragrant, about 1-2 minutes, until the paste darkens slightly.

Pour in the remaining coconut milk, 1 tbsp fish sauce, and 1 tbsp brown sugar. Stir to combine and bring to a gentle simmer, about 3-4 minutes, until the sauce thickens slightly.

Add 1 lb shrimp and cook, stirring occasionally, until they turn pink and opaque, about 4-5 minutes. Do not overcook.

Remove from heat and squeeze in the juice of 1 lime. Taste and adjust seasoning if needed.
