- 1 lb shrimp, peeled and deveined
- 2 cups cooked rice
- 2 cups frisée lettuce
- 3 tbsp olive oil
- 3 cloves garlic, minced
- ½ tsp salt

Pat the 1 lb shrimp dry and season with the 0.5 tsp salt. Heat 2 tbsp of the olive oil in a large skillet over medium-high until shimmering, about 2 minutes.

Add the shrimp in a single layer and cook without stirring until they turn pink on the bottom, about 2 minutes. Flip and cook until just opaque throughout, another 1-2 minutes. Transfer to a plate.

Reduce heat to medium and add the remaining 1 tbsp olive oil and the 3 minced garlic cloves. Cook, stirring, until fragrant but not browned, about 30 seconds.

Add the 2 cups cooked rice and 2 cups frisée to the skillet. Toss gently to coat with the garlic oil, cooking just until the frisée wilts slightly, about 1 minute.
