Ingredients
- 1 block (about 14 oz) silken tofu
- 8 oz shrimp, peeled and deveined
- 2 tbsp soy sauce
- 1 tsp cornstarch
- 2 stalks green onions, sliced
- 1 tbsp vegetable oil

Drain the 1 block silken tofu and gently slice into 1/2-inch thick pieces. Arrange on a serving plate and set aside.

In a small bowl, mix 2 tbsp soy sauce, 1 tsp cornstarch, and 3 tbsp water until smooth. Set aside.

Heat 1 tbsp vegetable oil in a skillet over medium-high heat. Add 8 oz shrimp and cook until pink and opaque, about 2-3 minutes per side.

Pour the soy sauce mixture over the shrimp. Stir and cook until the sauce thickens and coats the shrimp, about 1 minute.

Spoon the shrimp and sauce over the tofu. Garnish with 2 sliced green onions and serve warm.
