Ingredients
- 1 lb shrimp
- 2 medium potatoes
- 1 large egg
- 1 cup panko breadcrumbs
- ½ cup mayonnaise
- 1 whole lemon
- 3 tbsp vegetable oil
- 1 tsp salt

Peel and chop the 2 medium potatoes into chunks. Boil in salted water until fork-tender, about 15 minutes. Drain and mash until smooth.

Chop the 1 lb shrimp into small pieces. Mix into the mashed potatoes with 1 tsp salt and the zest of the 1 lemon.

Shape the mixture into 8 oval croquettes. Dip each in the 1 beaten egg, then coat with the 1 cup panko breadcrumbs.

Heat the 3 tbsp vegetable oil in a large skillet over medium-high. Fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per side. Do not crowd the pan.
