Ingredients
- 8 oz shrimp, peeled and deveined
- 6 sheets filo dough
- 2 tbsp fresh basil or mint, chopped
- 3 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper

Chop the 8 oz shrimp into small pieces and mix with 2 tbsp chopped basil or mint, 0.5 tsp salt, and 0.25 tsp black pepper.

Lay 1 sheet of filo on a work surface and brush lightly with olive oil. Cut into 3 long strips.

Place a spoonful of the shrimp mixture at one end of each strip, then fold into triangles like a flag, using a little oil to seal.

Heat 2 tbsp olive oil in a skillet over medium. Cook the triangles in batches until golden and crisp, about 3 minutes per side.
