Ingredients
- 1 lb shrimp, peeled and deveined
- 1 lb asparagus, trimmed and cut into 2-inch pieces
- 3 cloves garlic, minced
- 2 tbsp soy sauce
- 2 tbsp vegetable oil
- 1 tsp cornstarch
- 2 tbsp water
- ½ tsp salt
Instructions
- 1
In a small bowl, whisk the 2 tbsp water and 1 tsp cornstarch until smooth. Stir in the 2 tbsp soy sauce and set aside.
- 2
Pat the 1 lb shrimp dry with paper towels and season with the 0.5 tsp salt.
- 3
Heat 1 tbsp of the vegetable oil in a large skillet or wok over high heat until shimmering. Add the shrimp in a single layer and cook until pink and opaque, about 2 minutes per side. Transfer to a plate.
- 4
Add the remaining 1 tbsp oil to the skillet. Add the 1 lb asparagus and 3 minced garlic cloves. Stir fry until the asparagus is bright green and crisp-tender, about 4 minutes.
- 5
Return the shrimp to the skillet. Pour in the sauce and toss everything together until the sauce thickens and coats the shrimp and asparagus, about 1 minute. Serve hot.
- 6
Optional: add a pinch of red pepper flakes or a squeeze of lemon juice before serving for extra flavor.
