Ingredients

  • 2 medium cucumber, peeled
  • 3 medium tomato, ripe
  • ½ medium red onion
  • 2 whole (juiced) lime
  • ¼ cup fresh mint, chopped
  • 3 tbsp olive oil
  • 1 pinch to taste salt and pepper

Instructions

    Halve the cucumber lengthwise, scoop out the seedy center with a spoon, then dice into 1/2-inch cubes.

    Dice the tomato into 1/2-inch cubes. Thinly slice the red onion into half-moons.

    Combine cucumber, tomato, and onion in a serving bowl. Pour lime juice and olive oil over the top.
