Ingredients
- 2 lb russet potatoes, peeled and quartered
- 1.5 lb ground beef
- 1 medium yellow onion, diced
- 1 cup beef broth
- 4 tbsp butter
- ½ cup whole milk
- 1 pinch salt and pepper to taste

Preheat oven to 400°F. Boil potatoes in salted water until fork-tender, 12–15 minutes.

Heat 1 tbsp butter in a large skillet over medium-high until foaming.

Cook ground beef, breaking up with a spoon, until no pink remains, ~6 minutes.

Add diced onion and cook, stirring, until softened, ~3 minutes.

Pour in beef broth and stir. Simmer 2 minutes. Season with salt and pepper.

Drain potatoes. Mash with remaining 3 tbsp butter and milk until creamy.

Transfer beef mixture to a 9×13 baking dish. Top evenly with mashed potatoes.
