Ingredients

  • 1.5 lb ground beef
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 2 lb potatoes, russet
  • 4 tbsp butter

    Preheat oven to 400°F. Cut potatoes into 2-inch chunks.

    Boil potatoes in salted water until fork-tender, ~12 minutes. Drain and return to pot.

    Heat oil in a large skillet over medium-high. Brown ground beef, breaking it up with a spoon, until no pink remains, ~6 minutes.

    Add diced onion and carrots. Sauté until softened, ~4 minutes.

    Stir in tomato paste and cook for 1 minute until fragrant.

    Pour in beef broth and frozen peas. Simmer 3 minutes until thickened slightly.

    Mash hot potatoes with 4 tbsp butter, salt, and pepper until creamy.
