Ingredients
- 1.5 lb ground beef
- 1 medium onion, diced
- 24 oz marinara sauce
- 15 oz ricotta cheese
- 2 cups mozzarella cheese, shredded, divided
- ½ cup parmesan cheese, grated
- 1 large egg
- 1 lb lasagna noodles
- 1 pinch salt and pepper to taste

Preheat oven to 375°F. Bring a large pot of salted water to a boil.

Boil lasagna noodles until al dente per package directions. Drain and lay flat on paper towels.

In a large skillet, cook ground beef and diced onion over medium-high, breaking up meat, until no pink remains (~8 minutes).

Stir in marinara sauce and simmer 5 minutes until slightly thickened. Season with salt and pepper.

In a bowl, mix ricotta, egg, 1.5 cups mozzarella, and parmesan until well combined.

Spread a thin layer of beef sauce on the bottom of a 9x13-inch baking dish.

Layer noodles (overlap slightly), then half the ricotta mixture, then half the remaining beef sauce.

Repeat: noodles, ricotta mixture, beef sauce. Top with final layer of noodles and remaining 0.5 cup mozzarella.

Cover with foil and bake 20 minutes. Remove foil, bake 15 minutes more until cheese is golden and bubbly.
