Ingredients
- 2 fish (about 1 lb each) whole sea bream (orata), gutted and scaled
- 1 whole (halved) lemon
- 3 cloves, sliced thin garlic
- 4 sprigs fresh rosemary or thyme sprigs
- 3 tbsp extra-virgin olive oil
- 1 to taste salt and black pepper

Preheat oven to 425°F. Pat fish dry inside and out with paper towels.

Lay fish on a sheet pan. Stuff each cavity with lemon half, garlic, and herb sprigs.

Drizzle fish generously with olive oil. Season salt and pepper inside and out.

Roast 14–16 minutes until skin is golden and crispy, flesh flakes at the thickest part.
