Ingredients
- 2 fish (12-14 oz each) whole branzino, cleaned and gutted
- 1 whole lemon
- 3 sprigs fresh thyme or oregano
- 3 cloves garlic cloves, sliced thin
- 3 tbsp olive oil
- 1 pinch each salt and black pepper

Preheat oven to 450°F. Pat branzino dry inside and out with paper towels.

Slice lemon into thin rounds. Stuff each fish cavity with lemon slices, thyme, and garlic.

Arrange fish on a sheet pan. Drizzle with olive oil, season with salt and pepper inside and out.

Roast for 12-14 minutes until flesh is opaque at the thickest part and skin crisps at edges.

Transfer to a plate. Squeeze remaining lemon over the fish and serve immediately.
