Ingredients

  • 3 pounds pork ribs (about 3 pounds), bone-in
  • 1.5 teaspoons salt
  • ½ teaspoon black pepper
  • 1 tablespoon caraway seeds
  • 2 tablespoons olive oil
  • 3 tablespoons whole grain mustard

Instructions

    Set the oven to 425°F and wait until it finishes heating, about 10 minutes — the indicator light or beep will tell you when it's ready.

    Pat the pork ribs dry with paper towels by pressing firmly all over both sides until they no longer feel wet to the touch.

    Arrange the ribs in a single layer, bone-side down, on a large sheet pan (at least 18 by 13 inches) with some space between each rib.

    Sprinkle 1.5 teaspoons of salt and 0.5 teaspoon of black pepper evenly over the top of the ribs.

    Sprinkle 1 tablespoon of caraway seeds over the ribs, then drizzle 2 tablespoons of olive oil over the top and rub gently with your fingers to coat.

    Spread 3 tablespoons of whole grain mustard thinly over the top of the ribs using the back of a spoon, covering as much surface as possible.

    Slide the pan into the oven and roast for 25 to 30 minutes until the ribs are deep golden brown on top and the meat pulls back from the bones slightly.

    Remove the pan from the oven and let the ribs rest for 5 minutes before serving, so the juices redistribute and stay in the meat.
