Ingredients
- 1.5 lb pork loin, boneless
- 2 whole apple (any firm variety, cored)
- 1 whole red onion
- 2 tsp fresh thyme (or dried)
- 1 tbsp apple cider vinegar
- 1 tbsp Dijon mustard

Pat pork dry. Chop apples and onion into 1-inch chunks. Toss with 1 tbsp olive oil, salt, and pepper on a sheet pan.

Heat 1 tbsp olive oil in a skillet over medium-high until it shimmers. Sear pork 2 minutes per side until golden.

Transfer seared pork to the sheet pan. Scatter apples and onions around it. Sprinkle thyme over everything.

Roast at 400°F for 10–12 minutes until pork reaches 145°F at the center (use a meat thermometer).
