Ingredients

  • 8 oz loukaniko (Greek pork sausages)
  • 1 large red bell pepper, cut into 1-inch chunks
  • 1 medium yellow onion, cut into thick wedges
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 2 cloves garlic, minced

Instructions

    Preheat oven to 425°F. Toss sausages, pepper, onion, garlic, oregano, olive oil, salt, and pepper on a sheet pan.

    Spread everything in a single layer. Roast for 15 minutes, shaking the pan halfway through, until sausages are golden and cooked through.
