Ingredients
- 1.5 lb kielbasa (pork sausage)
- 2 whole red bell peppers
- 1 large yellow onion
- 3 tbsp olive oil
- 2 tbsp apple cider vinegar
- 2 tbsp grainy mustard
- ½ tsp caraway seeds

Slice kielbasa into 0.5-inch rounds. Core and slice peppers into 1-inch chunks. Slice onion into thick wedges.
