Ingredients

  • 1.5 lb kielbasa (pork sausage)
  • 2 whole red bell peppers
  • 1 large yellow onion
  • 3 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 2 tbsp grainy mustard
  • ½ tsp caraway seeds

Instructions

    Slice kielbasa into 0.5-inch rounds. Core and slice peppers into 1-inch chunks. Slice onion into thick wedges.

    Toss kielbasa, peppers, and onion with olive oil, salt, pepper, and caraway seeds on a sheet pan.

    Spread in a single layer and roast at 425°F for 15 minutes, stirring halfway through until sausage edges blacken.

    Drizzle with apple cider vinegar and grainy mustard, toss once more, and roast 3 more minutes.

    Taste and adjust seasoning with salt and pepper. Serve hot straight from the pan or on crusty bread.
