Ingredients

  • ¾ lb ground lamb
  • ¼ cup fresh breadcrumbs
  • ½ cup fresh herbs (parsley, oregano, mint), finely chopped
  • 1 pint cherry tomatoes
  • 3 tbsp olive oil
  • 4 slices crusty bread for serving

Instructions

    Mix ground lamb with breadcrumbs, herbs, salt, and pepper. Form into 12 walnut-sized balls.

    Toss meatballs and tomatoes with 2 tbsp olive oil on a sheet pan. Spread in a single layer.

    Roast at 400°F for 12–14 minutes until meatballs are cooked through and tomatoes blister.

    Brush bread with remaining 1 tbsp olive oil. Toast briefly in the oven or on a skillet.

    Transfer meatballs and tomatoes to a serving plate. Drizzle with any pan juices.

    Serve immediately with warm bread and a squeeze of fresh lemon juice if you have it.
