Ingredients
- 1 lb lamb shoulder, cut into 1.5-inch cubes
- 4 tbsp olive oil
- 1.5 tbsp smoked paprika, cumin, oregano (or Italian seasoning)
- 12 oz russet potatoes, cut into thin fries
- ½ medium red onion, cut into 1-inch chunks
- 2 cups mixed salad greens

Toss lamb cubes with 2 tbsp oil, the spice blend, salt, and pepper; let sit 2 minutes.

On a large sheet pan, spread fries in one corner and onion chunks in another; toss both with 1 tbsp oil and salt.

Thread lamb onto metal skewers, nestle them between the fries and onions, and drizzle with remaining 1 tbsp oil.

Roast at 425°F for 14–16 minutes until lamb is cooked through and fries are golden-brown and crispy.
