Ingredients

  • 1.5 lb pork ribs (baby back or spare), cut into 2-3 rib portions
  • 8 oz asparagus, trimmed
  • 6 cloves garlic, minced
  • 3 tbsp olive oil
  • 1 whole lemon
  • 1 pinch salt and black pepper to taste

Instructions

    Pat ribs dry and season generously with salt and black pepper on both sides.

    Heat 2 tbsp oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Sear ribs 2 minutes per side without moving until edges brown. Transfer to a sheet pan.

    Toss asparagus with remaining 1 tbsp oil, minced garlic, salt, and pepper. Scatter around the ribs.

    Roast at 425°F until ribs are tender and asparagus edges curl, about 12–14 minutes.
