Pat ribs dry and season generously with salt and black pepper on all sides.
Step 2
Heat 1 tbsp butter in a large heavy skillet over medium-high until foaming.
Step 3
Sear ribs 2–3 minutes per side without moving until edges are deeply browned. Transfer to a plate.
Step 4
Add remaining 2 tbsp butter and garlic cloves to the skillet. Cook 1 minute until fragrant.
Step 5
Pour in broth and vinegar, scraping the browned bits from the bottom of the skillet. Add bay leaf.
