Ingredients
- 14 oz firm tofu, pressed and cut into 1-inch cubes
- ½ cup BBQ sauce
- 8 oz sliced mushrooms
- ¾ cup quinoa, uncooked

Preheat oven to 425°F, then toss tofu cubes with oil, salt, and pepper on a sheet pan.

Roast tofu for 12 minutes until edges turn golden and crispy, shaking the pan halfway.
