Ingredients

  • 1 lb pork tenderloin or thick-cut pork chops
  • 2 whole red bell pepper
  • 3 tbsp olive oil
  • 2 tsp smoked paprika
  • 1 whole lemon (juiced)
  • 1 to taste salt and black pepper

Instructions

    Heat oven to 425°F. Slice peppers into 1/2-inch strips, removing seeds and stems.

    Pat pork dry. Season both sides generously with salt, pepper, and smoked paprika.

    Divide pepper strips into 2–3 bundles. Wrap each pork piece tightly around a bundle, securing with toothpicks if needed.

    Drizzle wrapped pork with olive oil. Spread on a sheet pan in a single layer.

    Roast 12–14 minutes until pork reaches 145°F internal temp and edges char slightly.

    Remove from oven. Squeeze lemon over top and serve immediately.
