Ingredients
- 4 pieces flatbread
- 1 lb ground lamb or beef
- 1 cup plain yogurt
- ¼ cup pistachios
- 1 medium tomato
- ½ medium cucumber
- ¼ cup fresh herbs (parsley or mint)
- 2 tbsp shawarma spice blend

In a bowl, mix the 1 lb ground lamb or beef with 2 tbsp shawarma spice blend until well combined.

Heat a large skillet over medium-high heat. Add the meat and cook, breaking it up, until browned and cooked through, about 8 minutes.

While meat cooks, chop the 1 tomato and 0.5 cucumber into small pieces. Roughly chop the 0.25 cup fresh herbs.

In a small bowl, stir together the 1 cup yogurt and 0.25 cup pistachios. Season with salt and pepper.

Warm the 4 flatbreads in a dry skillet or microwave for 30 seconds until pliable.

Spread a generous spoonful of the yogurt sauce on each flatbread. Top with the cooked meat, chopped tomato, cucumber, and herbs.

Fold the sides of the flatbread over the filling and roll tightly. Serve immediately.
