Ingredients

  • 1 lb rotisserie chicken, shredded
  • 2 cups cooked rice (or microwaveable pouch)
  • ½ medium red onion, thinly sliced
  • 2 tbsp white vinegar
  • 3 tbsp tahini
  • 1 pinch / handful sumac or lemon juice, fresh herbs (cilantro, parsley, or dill)

Instructions

    Toss sliced red onion with 2 tbsp white vinegar and a pinch of salt. Let sit for 2 minutes while you assemble the bowls.

    Divide warm rice between two bowls. Top each with shredded rotisserie chicken.

    Whisk tahini with 2–3 tbsp warm water and 1 tbsp lemon juice until smooth and drizzle-able.

    Drizzle tahini sauce over the chicken, then top with pickled red onions.

    Sprinkle with sumac (or more lemon juice) and fresh cilantro or parsley. Serve immediately.
