Ingredients
- 1 lb rotisserie chicken, shredded
- 2 cups cooked rice (or microwaveable pouch)
- ½ medium red onion, thinly sliced
- 2 tbsp white vinegar
- 3 tbsp tahini
- 1 pinch / handful sumac or lemon juice, fresh herbs (cilantro, parsley, or dill)

Toss sliced red onion with 2 tbsp white vinegar and a pinch of salt. Let sit for 2 minutes while you assemble the bowls.

Divide warm rice between two bowls. Top each with shredded rotisserie chicken.

Whisk tahini with 2–3 tbsp warm water and 1 tbsp lemon juice until smooth and drizzle-able.
