Ingredients

  • 1 lb carnitas (store-bought or leftover pulled pork)
  • 2 cups cooked white or brown rice
  • 1 can (15 oz) black beans (canned or cooked), warmed
  • 1 medium bell pepper (red or yellow), sliced
  • 1 whole lime (juiced)
  • ½ cup shredded sharp cheddar or cotija cheese
  • ¼ cup fresh cilantro (chopped)
  • ¾ cup salsa (pico de gallo or mild)

Instructions

    Warm carnitas in a skillet over medium heat, breaking into bite-sized pieces, ~4 minutes.
