Ingredients
- 1 lb beef sirloin or tenderloin, cubed into 1-inch pieces
- 4 whole garlic cloves, sliced thin
- 3 tbsp oyster sauce
- 1 tbsp fish sauce
- 1 whole lime (juiced)
- 1 whole shallot, sliced thin
- 2 whole scallion, cut into 2-inch pieces

Heat 2 tbsp oil in a large skillet over high heat until it just starts to smoke, about 90 seconds.

Add half the beef cubes without stirring. Sear 90 seconds per side until edges brown; transfer to a plate.

Repeat with remaining beef, then add all beef back to the skillet with the garlic and shallot.

Toss constantly over high heat for 30 seconds until fragrant, then pour in oyster sauce and fish sauce.

Toss for 20 seconds to coat, then squeeze lime juice over and scatter scallion on top.
