Ingredients
- 2 large chicken breasts
- ½ cup sesame seeds
- 1 large egg
- 2 tbsp olive oil
- 4 cups arugula
- 1 medium lemon
- ½ tsp salt
- ¼ tsp black pepper

Place the 2 chicken breasts between plastic wrap and pound to an even 1/2-inch thickness. Season both sides with the 1/2 tsp salt and 1/4 tsp black pepper.

Beat the 1 egg in a shallow dish. Spread the 1/2 cup sesame seeds on a plate. Dip each chicken breast in the egg, then press into the sesame seeds to coat both sides.

Heat the 2 tbsp olive oil in a large skillet over medium-high. Add the chicken and cook until golden and cooked through, about 4-5 minutes per side. The chicken should feel firm and reach 165°F.

Divide the 4 cups arugula between two plates. Slice the chicken and place over the arugula.

Cut the 1 lemon into wedges and serve alongside. Squeeze lemon over the chicken and arugula just before eating.
