Senegalese Fish and Rice

Ingredients

  • 1 lb white fish fillets
  • ½ lb shrimp
  • 1 cup long-grain rice
  • 1 medium onion
  • 3 tbsp tomato paste
  • ½ cup frozen peas

Instructions

    In a large pot, heat 2 tbsp oil over medium. Add 1 sliced onion and cook until soft, about 5 minutes.

    Stir in 3 tbsp tomato paste and 1 cup rice, coating well. Add 2 cups water and bring to a boil.

    Season 1 lb fish fillets with salt and pepper. Nestle fish and 0.5 lb shrimp into the pot. Cover and simmer until rice is tender and fish flakes, about 15 minutes.

    Gently fold in 0.5 cup frozen peas and cook 2 minutes until bright green. Serve hot, with mussels on top if you have them.
