Ingredients

  • 1 cup semolina
  • 4 tablespoons ghee
  • ½ cup mixed nuts (almonds, walnuts, cashews)
  • ¼ cup raisins
  • ½ cup sugar
  • 2 cups water
  • 1 tablespoon dried rose petals

Instructions

    Heat 4 tbsp ghee in a heavy pan over medium heat. Add 1 cup semolina and toast, stirring constantly, until fragrant and lightly golden, about 5 minutes.

    Add 0.5 cup mixed nuts and 0.25 cup raisins. Cook for 2 minutes, stirring, until nuts are toasted and raisins plump slightly.

    Carefully pour in 2 cups water (mixture will splutter). Stir well and bring to a gentle boil, then reduce heat to low.

    Add 0.5 cup sugar and stir until dissolved. Cook, stirring often, until pudding thickens and pulls away from the pan, about 5-7 minutes.

    Remove from heat and let rest for 2 minutes. Serve warm, garnished with 1 tbsp dried rose petals.
