Ingredients
- 12 large scallops
- 2 tbsp olive oil
- 1 tsp lemon zest
- 1 cup microgreens
- 1 small leek
- ½ tsp salt

Pat the 12 scallops dry with paper towels and season both sides with the 0.5 tsp salt.

Heat 1 tbsp of the olive oil in a large skillet over high heat until shimmering, about 2 minutes.

Place the scallops in the skillet in a single layer, not touching. Sear until golden brown, about 2 minutes per side, without moving them.

Remove the scallops to a plate. Thinly slice the 1 small leek and sauté in the remaining 1 tbsp olive oil over medium heat until soft, about 3 minutes.

Top the scallops with the sautéed leek, sprinkle with the 1 tsp lemon zest, and scatter the 1 cup microgreens over the top. Serve immediately.
