Ingredients
- 6 pieces large sea scallops, patted dry
- 3 tbsp butter
- ½ piece lemon
- 2 tbsp caviar (or quality roe)
- 2 tbsp toasted nuts (pistachios or almonds), chopped
- ¼ tsp fleur de sel or finishing salt
- ⅛ tsp black pepper

Heat a 12-inch stainless steel skillet over medium-high until a drop of water sizzles instantly.

Season scallops generously with salt and black pepper on both sides.

Add 1 tbsp butter to the skillet. Once foaming, lay scallops flat without moving them.
