Ingredients

  • 6 pieces large sea scallops, patted dry
  • 3 tbsp butter
  • ½ piece lemon
  • 2 tbsp caviar (or quality roe)
  • 2 tbsp toasted nuts (pistachios or almonds), chopped
  • ¼ tsp fleur de sel or finishing salt
  • ⅛ tsp black pepper

Instructions

    Heat a 12-inch stainless steel skillet over medium-high until a drop of water sizzles instantly.

    Season scallops generously with salt and black pepper on both sides.

    Add 1 tbsp butter to the skillet. Once foaming, lay scallops flat without moving them.

    Sear 90 seconds per side until edges look opaque and the surface is golden. Flip only once.

    Remove scallops to a plate. Reduce heat to medium, add remaining 2 tbsp butter to the pan.

    Swirl butter until it turns amber and smells nutty, about 60 seconds. Pour over scallops.

    Top scallops with caviar and chopped nuts. Squeeze lemon over and finish with fleur de sel.
