Ingredients

  • 2 filets salmon fillets
  • 8 oz mushrooms
  • 4 cups mixed greens
  • 1 cup wild rice
  • 3 tbsp olive oil
  • 1 whole lemon
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

    Cook wild rice according to package directions; keep warm.

    Pat salmon dry, season with salt and pepper. Heat 1 tbsp oil in a skillet over medium-high.

    Sear salmon skin-side down until crispy, 4-5 minutes. Flip and cook 2-3 minutes more; remove.

    Add remaining oil to skillet, sauté mushrooms until golden, about 5 minutes.

    Add greens, toss until wilted, 1-2 minutes. Squeeze lemon juice over.

    Serve salmon over rice with mushrooms and greens on top.

    Drizzle with extra olive oil and lemon if desired.
