Ingredients
- 2 filets salmon fillets
- 8 oz mushrooms
- 4 cups mixed greens
- 1 cup wild rice
- 3 tbsp olive oil
- 1 whole lemon
- 1 tsp salt
- ½ tsp black pepper

Cook wild rice according to package directions; keep warm.

Pat salmon dry, season with salt and pepper. Heat 1 tbsp oil in a skillet over medium-high.

Sear salmon skin-side down until crispy, 4-5 minutes. Flip and cook 2-3 minutes more; remove.

Add remaining oil to skillet, sauté mushrooms until golden, about 5 minutes.
