Ingredients

  • 2 6 oz each salmon fillets
  • 1 cup corn kernels
  • 2 stalks green onions
  • 1 tbsp sesame seeds
  • 1 tsp black sesame seeds
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. 1

Pat the 2 salmon fillets dry with paper towels and season both sides with the 1 tsp salt and 1/2 tsp black pepper.

  2. 2

Heat the 2 tbsp olive oil in a nonstick skillet over medium-high heat until shimmering, about 2 minutes.

  3. 3

Place the salmon fillets skin-side down in the skillet and cook without moving for 4-5 minutes, until the skin is crispy and golden.

  4. 4

Flip the salmon and cook for another 3-4 minutes, until the flesh is opaque and flakes easily with a fork.

  5. 5

Remove the salmon from the skillet and set aside. Add the 1 cup corn kernels to the same skillet and sauté for 2-3 minutes, until lightly charred and tender.

  6. 6

Slice the 2 green onions thinly. Serve the salmon over the corn, topped with the sliced green onions and sprinkled with the 1 tbsp sesame seeds and 1 tsp black sesame seeds.

  7. 7

    Serve immediately, hot.
