Seafood Udon Noodles

Ingredients

  • 2 packages (7 oz each) udon noodles
  • ½ pound shrimp, peeled and deveined
  • ½ pound squid, cleaned and sliced into rings
  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 tablespoons vegetable oil
  • 3 stalks green onions, sliced
  • 1 whole lime, cut into wedges

Instructions

    Cook the 2 packages udon noodles according to package directions until just tender, about 5 minutes. Drain and set aside.

    In a small bowl, whisk together the 3 tbsp soy sauce and 1 tbsp honey until combined.

    Heat the 2 tbsp vegetable oil in a large skillet or wok over high heat until shimmering, about 1 minute.

    Add the 0.5 lb shrimp and 0.5 lb squid in a single layer. Cook without stirring for 2 minutes until they start to brown, then stir-fry for another 2 minutes until shrimp are pink and squid is opaque.

    Add the cooked udon noodles and the soy-honey sauce to the skillet. Toss everything together over high heat for 2 minutes until the noodles are well coated and heated through.

    Remove from heat and stir in the 3 sliced green onions. Serve immediately with lime wedges for squeezing over the top.

    Optional: add a pinch of red pepper flakes or grated ginger for extra kick.
