Seafood Chaufa
A Peruvian-style fried rice loaded with shrimp and calamari, tossed with onions, red chili, and a squeeze of lime. Served with crispy fries and a zesty onion-herb dipping sauce.

Ingredients
- 3 cups cooked rice
- ½ pound shrimp, peeled and deveined
- ½ pound calamari rings
- 1 medium red onion, sliced
- 1 whole red chili pepper, sliced
- 1 whole lime, cut into wedges
- 2 cups frozen french fries
- 3 tablespoons soy sauce

Cook the 2 cups frozen french fries according to package directions until golden and crispy, about 20 minutes. Set aside.

Heat 2 tbsp vegetable oil in a large wok or skillet over high heat. Add the 0.5 lb shrimp and 0.5 lb calamari rings in a single layer; cook until shrimp turn pink and calamari is opaque, about 3 minutes. Remove seafood and set aside.

In the same pan, add 1 sliced red onion and 1 sliced red chili pepper. Stir-fry until onion is soft and slightly charred, about 2 minutes.

Add the 3 cups cooked rice and 3 tbsp soy sauce. Toss everything together, breaking up clumps, until rice is evenly coated and heated through, about 3 minutes.

Return the seafood to the pan and toss with the rice for 1 minute until everything is combined and hot.

Serve the chaufa with the crispy fries and lime wedges on the side. Squeeze lime over the top before eating.

For the dipping sauce, mix 1/4 cup chopped cilantro, 1/4 cup chopped red onion, 2 tbsp lime juice, and a pinch of salt in a small bowl. Serve alongside.
