Ingredients

  • 2 medium zucchini
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

    Wash the 2 medium zucchini and slice them into 1/4 inch rounds. Pat dry with a paper towel to remove excess moisture.

    Heat the 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering, about 2 minutes.

    Add the zucchini slices in a single layer, working in batches if needed to avoid crowding. Season with the 1/2 teaspoon salt and 1/4 teaspoon black pepper.

    Cook without stirring for 3-4 minutes until the bottoms are golden brown and release easily from the pan.

    Flip the slices and cook for another 3-4 minutes until the other side is golden and the zucchini is tender when pierced with a fork.
