Ingredients
- 12 sheets lasagna noodles
- 1 lb Italian sausage
- 10 oz spinach
- 3 cups marinara sauce
- 15 oz ricotta cheese
- 2 cups mozzarella cheese
- ½ cup breadcrumbs

Preheat oven to 375°F. Cook the 12 lasagna noodles in salted boiling water until al dente, about 8-10 minutes; drain and set aside.

In a skillet over medium heat, cook the 1 lb sausage, breaking it up, until browned and cooked through, about 8 minutes. Add the 10 oz spinach and cook until wilted, about 2 minutes.

In a bowl, mix the 15 oz ricotta with half of the 2 cups mozzarella. Season with salt and pepper.

Spread 1 cup of the 3 cups marinara in a 9x13-inch baking dish. Layer 4 noodles, half the ricotta mixture, half the sausage-spinach mixture, and 1 cup marinara. Repeat layers, then top with remaining 4 noodles and remaining 1 cup marinara.

Sprinkle the remaining 1 cup mozzarella and the 0.5 cup breadcrumbs over the top. Cover with foil and bake for 25 minutes, then uncover and bake until bubbly and golden, about 15 more minutes.
