Ingredients
- 1.25 lb boneless chicken thighs
- ⅓ cup creamy peanut butter
- 1 whole (juiced) fresh lime
- 1.5 tbsp sambal oelek or chili paste
- 1.5 tbsp soy sauce
- 2 whole shallots, thinly sliced

Pat chicken dry. Season generously with salt and pepper on both sides.

Heat oil in a large skillet over medium-high heat until it shimmers, about 90 seconds.

Add chicken skin-side down. Sear 6 minutes without moving until skin is deep golden and crispy.

Flip chicken. Cook 4 minutes more until cooked through. Transfer to a plate.

In the same skillet, whisk together peanut butter, lime juice, sambal oelek, soy sauce, and 2 tbsp water until smooth.
