Ingredients

  • 1.25 lb boneless chicken thighs
  • ⅓ cup creamy peanut butter
  • 1 whole (juiced) fresh lime
  • 1.5 tbsp sambal oelek or chili paste
  • 1.5 tbsp soy sauce
  • 2 whole shallots, thinly sliced

Instructions

  1. 1

Pat chicken dry. Season generously with salt and pepper on both sides.

  2. 2

Heat oil in a large skillet over medium-high heat until it shimmers, about 90 seconds.

  3. 3

Add chicken skin-side down. Sear 6 minutes without moving until skin is deep golden and crispy.

  4. 4

Flip chicken. Cook 4 minutes more until cooked through. Transfer to a plate.

  5. 5

In the same skillet, whisk together peanut butter, lime juice, sambal oelek, soy sauce, and 2 tbsp water until smooth.

  6. 6

Return chicken to skillet. Top with sliced shallots and toss gently to coat. Serve hot with rice and lime wedges.
