Ingredients
- 8 oz fresh or frozen udon noodles
- 6 oz shrimp, peeled and deveined
- 4 oz squid, sliced into rings
- 1.5 cups dashi broth
- 3 tbsp soy sauce
- 2 tbsp mirin
- ¼ cup crispy fried onions

Bring a pot of salted water to a boil. Add udon and cook until tender, ~4 minutes. Drain and set aside.

Pat shrimp and squid dry with paper towels. Season lightly with salt and pepper.

Heat 2 tbsp oil in a large skillet over medium-high until shimmering, ~90 seconds.

Add shrimp and squid; cook without stirring for 90 seconds until edges curl.

Flip and cook 90 seconds more until opaque throughout. Transfer to a plate.

Pour dashi, soy sauce, and mirin into the same skillet. Bring to a gentle simmer.

Add cooked udon and stir to coat, warming through, ~2 minutes.
