Ingredients
- 4 large egg whites
- ½ cup sugar
- 2 large egg yolks
- 2 tablespoons all-purpose flour
- 1 teaspoon vanilla extract
- 2 tablespoons butter
- ¼ cup candied fruit
- 1 tablespoon powdered sugar

Preheat oven to 350°F (175°C). Butter a 9-inch baking dish with 2 tbsp butter.

In a large bowl, beat 4 egg whites with an electric mixer until soft peaks form. Gradually add 1/2 cup sugar, beating until stiff and glossy.

In a small bowl, whisk 2 egg yolks with 1 tsp vanilla extract until pale. Gently fold the yolk mixture into the egg whites.

Sift 2 tbsp flour over the egg mixture and fold gently with a spatula until just combined. Do not overmix; the batter should stay airy.

Spoon the batter into the prepared dish in three mounds, creating peaks. Smooth the tops slightly.

Bake for 12-15 minutes, until the tops are golden brown and the dumplings are puffed but still soft in the center.

Sprinkle with 1/4 cup candied fruit and dust with 1 tbsp powdered sugar. Serve immediately.
