Ingredients

  • 1 cup plain Greek yogurt
  • 1 cup ice water
  • ½ tsp cumin seeds
  • ¼ tsp salt
  • 2 medium carrots
  • 1 tbsp olive oil

Instructions

    Heat oven to 425°F. Slice carrots lengthwise into thin sticks, toss with oil and salt, spread on a sheet pan.

    Roast carrots for 12 minutes until edges caramelize and darken slightly.

    While carrots roast, toast cumin seeds in a dry skillet over medium heat for 1 minute until fragrant.

    Combine yogurt, ice water, toasted cumin, and salt in a blender. Blend until smooth and frothy, about 30 seconds.
