Ingredients

  • 3 large eggs
  • 1 tbsp butter
  • ½ cup salsa

Instructions

    Crack eggs into a bowl, add a pinch of salt and pepper, and whisk until just combined.

    Heat butter in an 8-inch nonstick skillet over medium until it foams and smells nutty, ~60 seconds.

    Pour in eggs and let them sit undisturbed for 30 seconds until the bottom starts to set.

    Gently push cooked egg toward the center with a spatula, tilting the pan so raw egg flows to the edges.

    When the top is still slightly wet but the bottom is set, spoon salsa down the center and fold the omelet in half.

    Slide onto a plate and serve hot with fresh red leaf lettuce on the side.
