Salmon with Broccoli and Cream Sauce

Ingredients
- 4 filets salmon fillets
- 1 head broccoli
- 1 cup heavy cream
- 1 medium red onion
- 2 tbsp fresh dill
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper

Pat the 4 salmon fillets dry and season both sides with 1/2 tsp salt and 1/4 tsp pepper. Cut the broccoli into small florets and thinly slice the 1 red onion.

Heat 1 tbsp olive oil in a large skillet over medium-high. Add the salmon skin-side down and cook until golden and crisp, about 4-5 minutes. Flip and cook 2-3 minutes more until just opaque. Transfer to a plate.

In the same skillet, add the remaining 1 tbsp olive oil and the sliced red onion. Cook over medium until softened, about 3 minutes.

Add the broccoli florets and 1/4 cup water. Cover and steam until broccoli is bright green and tender-crisp, about 4-5 minutes.

Pour in the 1 cup heavy cream and the remaining 1/2 tsp salt and 1/4 tsp pepper. Stir and simmer until the sauce thickens slightly, about 2-3 minutes.

Return the salmon to the skillet, spooning sauce over the top. Simmer gently for 1-2 minutes to warm through.

Sprinkle with the 2 tbsp chopped fresh dill and serve hot.
