Ingredients
- ½ lb sushi-grade salmon
- 1 avocado
- ½ cucumber
- 1 lemon
- 2 tbsp olive oil
- 1 tsp Dijon mustard
- ¼ cup microgreens
- ½ tsp salt

Dice the 0.5 lb salmon into 1/4-inch cubes and place in a bowl. Chill while you prep the vegetables.

Dice the 1 avocado and 0.5 cucumber into similar 1/4-inch cubes. Add to the salmon.

In a small bowl, whisk the juice of 1 lemon, 2 tbsp olive oil, 1 tsp Dijon mustard, and 0.5 tsp salt until combined.

Pour the dressing over the salmon mixture and gently toss to coat. Taste and add more salt if needed.

Divide the tartare between 2 plates. Top each with 2 tbsp microgreens and serve immediately.
