Ingredients
- 2 filets salmon fillets
- 1 large mango
- ½ medium red onion
- 4 cups mixed salad greens
- 1 whole lime
- 3 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper

Pat the 2 salmon fillets dry and season both sides with the 0.5 tsp salt and 0.25 tsp black pepper.

Heat 1 tbsp of the olive oil in a skillet over medium-high. Add the salmon skin-side down and cook until the skin is crispy and the fish is opaque, about 4-5 minutes per side. Remove and set aside.

While the salmon cooks, peel and dice the 1 large mango into cubes. Thinly slice the 0.5 red onion. Zest and juice the 1 lime into a small bowl.

Whisk the lime juice and zest with the remaining 2 tbsp olive oil in a small bowl to make the dressing. Season with a pinch of salt and pepper.

In a large bowl, toss the 4 cups mixed greens with the diced mango and sliced red onion. Drizzle with the dressing and toss to coat.

Flake the cooked salmon into large chunks and place on top of the salad. Serve immediately, with extra lime wedges if desired.
