Ingredients
- 2 filets salmon fillets
- 2 cups cooked rice
- 2 cups broccoli florets
- 2 medium carrots
- 3 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp ginger
- 2 tbsp olive oil

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a small bowl, whisk together 3 tbsp soy sauce, 1 tbsp honey, and 1 tbsp grated ginger. Set aside.

Place 2 salmon fillets on the baking sheet. Brush with half of the soy mixture. Roast for 12-15 minutes, until the salmon flakes easily with a fork.

While salmon cooks, steam 2 cups broccoli florets and 2 sliced carrots in a steamer basket over boiling water for 5-7 minutes, until tender-crisp.

Divide 2 cups cooked rice between two bowls. Top with the roasted salmon, steamed broccoli, and carrots.
