Salmon and Pea Pasta

Ingredients
- 8 oz pasta
- 8 oz salmon fillet
- 1 cup frozen peas
- 1 cup heavy cream
- 2 cloves garlic
- 1 tbsp olive oil
- ½ tsp black pepper
- 1 tsp salt

Bring a large pot of salted water to a boil. Add the 8 oz pasta and cook until al dente, about 8-10 minutes. Reserve 1/2 cup pasta water, then drain.

While pasta cooks, pat the 8 oz salmon dry and season with 1/2 tsp salt and 1/4 tsp black pepper.

Heat the 1 tbsp olive oil in a large skillet over medium-high. Add the salmon skin-side down and cook until golden and cooked through, about 4-5 minutes per side. Remove and flake into chunks.

Reduce heat to medium. Add the 2 minced garlic cloves and cook until fragrant, about 1 minute.

Pour in the 1 cup heavy cream and bring to a gentle simmer. Cook until slightly thickened, about 2-3 minutes.

Stir in the 1 cup frozen peas and cook until bright green and tender, about 2 minutes.

Add the cooked pasta and flaked salmon to the sauce. Toss to coat, adding reserved pasta water a splash at a time if needed for a silky sauce.

Season with remaining 1/4 tsp black pepper and salt to taste. Serve hot.
