Salmon and Avocado Tartare

- ½ lb salmon fillet (sushi-grade)
- 1 avocado
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1 tbsp lemon juice
- 2 tbsp fresh parsley
- ¼ tsp salt
- ¼ tsp black pepper

Dice the 0.5 lb salmon into small cubes, about 1/4 inch. Place in a bowl and chill in the refrigerator while you prepare the other ingredients.

Cut the 1 avocado in half, remove the pit, and scoop the flesh out. Dice into similar-sized cubes as the salmon.

In a small bowl, whisk together the 2 tbsp soy sauce, 1 tsp sesame oil, 1 tbsp lemon juice, 0.25 tsp salt, and 0.25 tsp black pepper.

Gently combine the diced salmon and avocado in a mixing bowl. Pour the dressing over and toss carefully to coat without mashing the avocado.

Chop the 2 tbsp fresh parsley and sprinkle over the tartare. Serve immediately, optionally with crackers or toast.
