Ingredients

  • 1.25 lb ground beef
  • ¼ cup breadcrumbs
  • 1 whole egg
  • 8 oz mushrooms, cremini or button
  • 1 medium yellow onion
  • 1.5 cup beef broth
  • 1 tbsp tomato paste
  • 2 tbsp butter
  • 1 to taste salt and pepper

Instructions

  1. 1

Chop mushrooms into 1/4-inch pieces. Dice onion into 1/4-inch pieces.

  2. 2

Mix ground beef, breadcrumbs, egg, 0.5 tsp salt, and 0.25 tsp pepper in a bowl.

  3. 3

Form beef mixture into four 3/4-inch-thick patties; make a small indent in the center with your thumb.

  4. 4

Heat 1 tbsp butter in a large skillet over medium-high until foaming. Sear patties 3 minutes per side without moving.

  5. 5

Transfer patties to a plate. Add remaining 1 tbsp butter to the skillet.

  6. 6

Add mushrooms and onion; sauté until softened and golden, ~5 minutes, stirring occasionally.

  7. 7

Stir in tomato paste and cook 1 minute until fragrant.

  8. 8

Pour in beef broth, scraping up browned bits from the skillet bottom with a wooden spoon.

  9. 9

Return patties to the skillet, nestling them into the gravy. Simmer 8 minutes, uncovered.

  10. 10

Taste gravy and adjust salt and pepper as needed.

  11. 11

Serve patties topped with mushroom gravy.
