Ingredients
- 1.5 cups whole milk
- ½ cup sweetened condensed milk
- ¼ tsp saffron threads
- 3 whole green cardamom pods
- 1 cup ricotta or cottage cheese, drained
- 2 tbsp pistachios, roughly chopped

Crush cardamom pods lightly with the side of a knife to crack them open.

Heat whole milk and crushed cardamom in a small saucepan over medium heat until steaming, ~4 minutes.

Remove from heat. Drop in saffron threads and let steep for 2 minutes until the milk turns golden.

Stir in condensed milk until smooth, then strain out cardamom pods.

Gently form cottage cheese into 4 small discs with your hands and place in a shallow bowl.

Pour saffron cream over cheese discs, chill for 5 minutes, then scatter pistachios on top.
